The Bluegrass Bash is the one night of the year you can taste what cellaring actually does to these wines - how the tannins soften, how the fruit evolves, how Bluegrass transforms over time. It's also a great opportunity to let your hair down and hit the dance floor.
Enjoy a 4 course dinner with matching wines featuring 2023 Bluegrass vs 2017. New release vs six years in the cellar. Side by side, throughout the dinner.

What to Expect
Arrive to sparkling and canapés, then settle in for an evening built around one question: what does time do to Bluegrass?
Each course is paired with two wines - the 2023 current release and its 2017 museum counterpart. Same vineyard. Same winemaker. Six years apart. You'll taste the difference in real time, with Chef Chiero's menu designed to show off both.
Live music, dancing, and a room full of people who love good wine. This is the night to dress up and stay late.

Canapés on Arrival
Home smoked venison with Australian winter truffle and chervil. Fresh Sydney Pacific oyster with spring onion vinaigrette, salmon roe, and lime foam. Asiago e porcini rice ball with rosemary mayo. Yellowfin tuna tartare with stracciatella and yuzu emulsion.
First Course
Quail porchetta style with Australian winter truffle jus and micro herbs salad.
Paired with 2023 Alessandro Reserve Chardonnay and 2025 Single Suitcase Fiano.
Second Course
Money bag ravioli filled with ricotta and wagyu ragu, Italian saffron cream, seasonal mushrooms, and beef jus.
Paired with 2023 Bluegrass Shiraz and 2017 Bluegrass Shiraz.
Third Course
Herb crust beef tenderloin with porcini, potato cake, and garlic rosemary jus.
Paired with 2023 Bluegrass Cabernet Sauvignon and 2017 Bluegrass Cabernet Sauvignon.
Dessert
White chocolate and passion fruit creme mousse with Tonga vanilla crumble and coconut pandan sorbet. Cannoli filled tableside with your choice of ricotta and lemon, custard cream, or chocolate custard.
Paired with Saddler's Botrytis Semillon and Saddler's NV Muscat.
